Sundays are pancake breakfast days for my girls—well, most Sundays! Life can get hectic, but when the girls remember, we always turn it into pancake day. They love helping to mix the batter, though I swear they end up eating all the fruit I’ve set aside for toppings! These pancakes are super quick to make and have zero added sugar. The honey and ripe bananas give them just the right sweetness, and the dollop of whipped yogurt or cream makes them the perfect breakfast treat.
Serving Size: Makes about 4-5 pancakes.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
• 250 ml milk
• 250 ml flour
• 1 tsp baking powder
• 1 tbsp honey
• 2 tbsp melted butter
• 1 very ripe banana, sliced
1. In a bowl, whisk together the milk, flour, and baking powder.
2. Stir in the melted butter and honey until well combined
3. Gently fold in the sliced banana.
4. Heat a non-stick pan over medium heat and lightly grease with a little butter or oil.
5. Pour small amounts of the batter into the pan to form pancakes. Cook for 2-3 minutes on each side, or until the batter bubbles.
6. Serve warm with extra banana slices or your favourite toppings. For a creamy touch, serve with whipped yogurt or whipped cream.
Babies 6-9 months:
• Cut the pancakes into strips or wedges for self-feeding. Serve with extra banana wedges
Babies 9-12 months:
• Serve small, bite-sized pieces of pancakes that your baby can pick up.
• The pancakes can be served with additional soft fruit (like banana or berries) for extra flavour and texture.
• If your baby is comfortable with a little more texture, you can let them explore the pancakes whole, as long as they’re soft enough for them to chew safely.
Babies 12 months+:
• Offer whole or halved pancakes that your child can dip into yoghurt or fruit purée.
• If your baby is accustomed to a variety of textures, serve the pancakes as they are, with toppings like nut butter, yoghurt, or extra fruit.
• You can also sprinkle a tiny amount of cinnamon or mild spices to introduce new flavours.
Make sure you use a ripe banana for its softness and sweetness!
If adding blueberries on top, make sure to squash them between your fingers to remove any choking hazard before serving to your little one.
It’s safe to use honey in the batter as it’s fully cooked for babies under 1, but feel free to omit the honey entirely from the recipe.
